Mashed Potatoes

5 lb potatoes peeled and cut into large dice
1 Tbs coarse (kosher) salt
1 garlic clove
1 c cream fresh
1 stick butter
salt and pepper

In a large pot or Dutch oven, combine potatoes, coarse salt and garlic. Cover generously with cold water, bring to boil over high heat and cook until tender, about 20 minutes. Drain well. Transfer Potatoes to a mixing bowl, adding cream fresh, butter, fine salt and pepper. Beat with mixer until smooth. Alternatively, mash with a potato masher.
