Jerk Marinade

1 TBS ground allspice
1 TBS dried thyme
1 1/2 tsp cayenne pepper
1 1/2 tsp freshly ground black pepper
1 tsp ground nutmeg
1 TBS salt
2 TBS garlic powder
1 TBS sugar
1 c olive oil
1/2 c white or apple cider vinegar
1/2 c orange juice
1/4 c soy sauce
1 juice of one lime
1 Scotch bonnet pepper, seeded and finely chopped*
1 c chopped white onion
3 green onions, chopped

* 1 TBS of Helen's Tropical Exotics All Natural Island Heat may be substituted. If unable to find Scotch bonnet pepper or Island Heat substitute what ever chile you can find. Based on your own tolerance, apply whatever reticence you find necessary for survival. Marinade is also excellent without any chiles.


In a large mixing bowl, combine the allspice, thyme, cayenne pepper, black pepper, nutmeg, cinnamon, salt, garlic powder and sugar. Mix together well and add the olive oil slowly, stirring with a wire whisk, then add the vinegar, orange juice, soy sauce, lime juice, Scotch bonnet pepper, white onion and green onions.
