Jerk Marinade

1 TBS | ground allspice |
1 TBS | dried thyme |
1 1/2 tsp | cayenne pepper |
1 1/2 tsp | freshly ground black pepper |
1 tsp | ground nutmeg |
1 TBS | salt |
2 TBS | garlic powder |
1 TBS | sugar |
1 c | olive oil |
1/2 c | white or apple cider vinegar |
1/2 c | orange juice |
1/4 c | soy sauce |
1 | juice of one lime |
1 | Scotch bonnet pepper, seeded and finely chopped* |
1 c | chopped white onion |
3 | green onions, chopped |
* 1 TBS of Helen's Tropical Exotics All Natural Island Heat may be substituted. If unable
to find Scotch bonnet pepper or Island Heat substitute what ever chile you can find. Based
on your own tolerance, apply whatever reticence you find necessary for survival. Marinade
is also excellent without any chiles.
